Chicken Soba Noodle Salad

そばサラダ

The man’s favourite summer dinner. Helps that it is quick, easy, tasty and filling. Perfect for a hungry rugby player! Should serve 4 but it often serves just 2 of us! Gluten free (but make sure you get the 100% buckwheat soba noodles!).

Chicken Soba Noodle Salad

Ingredients:

200g 100% buckwheat Soba
1 red capscicum
1/4 cup chopped green onion
1 cup of your fave fresh herbs (coriander, basil, mint, parsley etc)
1 cup of snap peas or snow peas (blanched)
1-2 tablespoons sesame seeds
Chicken (optional but I always add it in)

Dressing (mix them all up in a bowl)
4 tablespoons sesame oil
2 tablespoons rice wine vinegar
2 tablespoons tahini (I sometimes like a bit more!)
3 teaspoons honey
Salt and pepper to taste

Method:

Cook the soba as per instructions on the packet. Once done, rinse under cold water for a few minutes so the noodles become cool.
Add all the ingredients into a serving bowl. Throw the dressing in and toss until well coated. Serve sprinkled with a few extra sesame seeds and green onion

sobanoodles

These are the “Juuwari Soba” noodles that I usually use. They are 100% buckwheat which are a little harder to find. Most Soba noodles include wheat flour, which means they won’t be gluten free
