Juuwari soba noodles are made from 100% buckwheat flour. Despite the name “buckwheat”, it is actually a seed and not related to wheat at all so are completely gluten free! The kanji you need to look out for is 十割そば (juuwari soba).
A lot of soba noodles these days unfortunately contain wheat flour. Wheat consumption can often be linked with diabetes, digestive issues, weight gain and allergies just to name a few.
